Cheesy Zucchini Bake


 



Ingredients:

- 2 Zucchini
- 2 Straight Neck Squash
- Dried Basil (1 tablespoon)
- Chopped Green Onion (2 Tablespoons)
- Cheese (1/4 Cup)
- Season how you want: salt, pepper, thyme, garlic, etc.


Directions:

- Slice the zucchini and squash at the width you desire (not too thin). Slice them again, making half moon shapes.
- Use either fresh basil that you can chop yourself or dried basil, already chopped. I prefer fresh and I only use between 1-2 tablespoons. Use the amount you desire.
- Chop your green onion down and use the amount you desire. I use 2 tablespoons.
- Use whatever cheese is your favorite. I go for a blend of mozzarella, provolone, and parmesan. You can use your desired amount, I'm a cheese lover so I usually add more that 1/4 cup.
- Using a nonstick casserole pan, throw in your mixed ingredients (don't forget to season how you want).
- Preheat the oven to 350F. Bake for about 20-30 minutes.
- Add a layer of cheese to the top of your bake. Cook for another 10-15 minutes.
- Serve hot!


*This should provide about 6 servings.










Strawberry, Lime, Cucumber, Mint Water


Ingredients:

- 1 Cup Cucumbers
- 2 Limes
- 1/4 Cup Fresh Mint Leaves
- 1 Cup Strawberries
- Ice Cubes
- Water


Directions:

- Wash all produce products
- Slice the limes
- Slice the cucumbers
- Leave mint leaves whole, do not dice
- Slice the strawberries
- Put all ingredients into water pitcher
- Add ice cubes and water
- Let sit for about 10 minutes to allow the flavor to sink in
- Drink when ready

*Healthy, tasty alternative to buying sugary drinks or any of those powder flavor additives.









Strawberry Spinach Salad


Ingredients:

- 1 Cup Avacado
- 1 Cup Blueberries
- 1 Mango
- 1 Package of Fresh Spinach 
- 4 Cups Strawberries
- 1/4 Cup Cashews
- 1/4 Cup Raspberry Vinaigrette
- Spice as desired: brown sugar, salt, pepper, onion powder.


Directions:

- Slice avacado, mango, and strawberries
- Mix fruit, cashews, spinach, and spices together
- Add raspberry vinaigrette last as dressing
- Instead of using onion powder, I like to use diced red onion

*A delicious salad to use as a meal or side dish for dinner.







Caprese Pasta


(I found this recipe, like all my others on Pinterest. This one specifically can be found at iheartnaptime.com)

Ingredients: 

- 1 lb. Rigatoni Pasta
- 1/2 Cup Grated Parmesan Cheese
- 2 to 5 oz. Mozzarella Cheese
- 3-5 Fresh Basil Leaves
- 2 Cups Prego Spaghetti Sauce
- 1/2 Cup Cream Cheese
- 1 Cup Grape Tomatoes
- Salt
- Olive Oil


Directions:

- Preheat oven to 350F
- Cook pasta in large pot of water, with salt, as directed on the box. Drain when cooked, drizzle olive oil onto pasta
- In large pan, warm the spaghetti sauce on medium heat. Be sure to add the cream cheese in to thicken the sauce. After warmed, add to pasta noodles
- Cut tomatoes in half
- Cut mozzarella into small cubes, separating about 1/4 cup for later. 
- Combine pasta with tomato slices and mozzarella cubes in a baking dish. Add remaining 1/4 cheese to the top of the bake
- Bake for 20-30 minutes or until golden brown
- Top with fresh basil and serve

*I changed the recipe a bit for my own personal taste preference. A delicious dinner meal for the whole family.
